Dec 12, 2018 about a week ago my Outlook changed the Headers of Emails I replay to to a way simpler format. Now it looks like this: Datum: Freitag, 23. November 2018 (KW 47, Q 4) um 12:53. Cc: Email address is removed for privacy., Email address is removed for privacy. Important information is lost on answering and forwarding.

Use Viewing preferences in Mail to change options for viewing messages.
To change these preferences in the Mail app on your Mac, choose Mail > Preferences, then click Viewing.

Use dark backgrounds for messages
| Show messages in the preview area and new messages you’re writing with a dark background (when this option is selected) or a light background (when this option isn’t selected). You can sort, filter, and otherwise change how messages appear in the message list.
Outlook Mac App Not Showing Status In Email Headers
We were on AppRiver hosted Exchange and had this behavior when ActiveSync wasn't enabled on the server side. The phone neither polled for new email, nor received a push. For some reason, this setting had no impact on pushes to Outlook on Windows.
I presume since you have gone through the setup yourself a few times, that you're granting all the permissions to control the creation and deletion of the Exchange profile on the phone from the server side. Don't know that those prohibit email transmission, but we've set every phone up to allow that control from the server side.
